Description
A delicious and refreshing Bombay sandwich filled with chutney, potato, and cucumber.
Ingredients

- 2 slices of bread
- 1 medium potato, boiled and mashed
- 1/2 cucumber, thinly sliced
- 2 tablespoons green chutney
- 1 tablespoon butter
Instructions
- Spread butter on one side of each slice of bread.
- On the unbuttered side, spread green chutney.
- Add a layer of mashed potato on one slice.
- Top with cucumber slices.
- Cover with the other slice of bread, chutney side down.
- Toast the sandwich on a skillet until golden brown on both sides.
- Slice and serve immediately.

- Use fresh bread for the best texture.
- Adjust chutney to taste for spiciness.
