Beetroot Kanji is a traditional fermented drink made from beetroots and spices.

- 2 medium beetroots, washed and peeled
- 1 tablespoon black salt
- 1 teaspoon roasted cumin powder
- 1 teaspoon mustard seeds
- 4 cups water
- 2 tablespoons lemon juice
Instructions
- Cut the beetroots into small pieces.
- In a jar, add the beetroot pieces, black salt, roasted cumin powder, and mustard seeds.
- Pour in the water and stir well.
- Cover the jar loosely and let it sit at room temperature for 3-5 days for fermentation.
- Taste the drink; once it reaches your desired sourness, strain it into bottles.
- Refrigerate the drink to stop fermentation.
- Serve chilled with a splash of lemon juice.
