Ingredients

  • 2 pounds beef cheeks
  • 2 cups beef stock
  • 1 onion, chopped
  • 2 carrots, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 cup red wine
  • 2 sprigs thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the beef cheeks with salt and pepper.
  3. In a large pot, sear the beef cheeks on all sides until browned.
  4. Remove the beef and set aside.
  5. Add onion, carrots, and garlic to the pot and sauté until softened.
  6. Stir in tomato paste and cook for 1 minute.
  7. Add red wine and simmer for 5 minutes.
  8. Return beef cheeks to the pot and add beef stock and thyme.
  9. Cover and transfer the pot to the oven.
  10. Cook for 3 hours until the beef is tender.

Notes

  • Serve with mashed potatoes or crusty bread.
  • You can use a slow cooker instead of the oven.
