Description
Tender beef cheeks slow-cooked in rich jus.
Ingredients

- 2 pounds beef cheeks
- 2 cups beef stock
- 1 onion, chopped
- 2 carrots, chopped
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 cup red wine
- 2 sprigs thyme
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- Season the beef cheeks with salt and pepper.
- In a large pot, sear the beef cheeks on all sides until browned.
- Remove the beef and set aside.
- Add onion, carrots, and garlic to the pot and sauté until softened.
- Stir in tomato paste and cook for 1 minute.
- Add red wine and simmer for 5 minutes.
- Return beef cheeks to the pot and add beef stock and thyme.
- Cover and transfer the pot to the oven.
- Cook for 3 hours until the beef is tender.
Notes
- Serve with mashed potatoes or crusty bread.
- You can use a slow cooker instead of the oven.
- Allow the beef to rest before slicing.
