Delicious baked potato boats filled with cheese, bacon, and green onions.
Ingredients

- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- 1/2 cup sour cream
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the potatoes and pierce them with a fork.
- Bake the potatoes for 45-60 minutes until tender.
- Let the potatoes cool slightly, then cut them in half lengthwise.
- Scoop out some of the potato flesh, leaving a border.
- Mix the scooped potato with cheese, bacon, green onions, sour cream, salt, and pepper.
- Fill the potato halves with the mixture.
- Return the loaded potatoes to the oven and bake for an additional 10-15 minutes.
- Serve warm.
