  • 1 cup vegan whipping cream (chilled)

Instructions

  1. In a small bowl, mix the cornstarch with 3–4 tablespoons of plant milk until smooth. Set aside.
  2. In a saucepan, combine the remaining plant milk, sugar, and vanilla extract. Heat over medium heat until it begins to simmer.
  3. Stir in the cornstarch mixture and cook, stirring constantly, until the pudding thickens—about 1 minute.
  4. Remove from heat, transfer to a bowl, and cover with plastic wrap touching the surface. Let cool to room temperature, then refrigerate for 3 hours.
  5. Whip the vegan cream until stiff peaks form. Blend the chilled pudding until smooth and gently fold in the whipped cream.
  6. Spoon the Vanilla Pudding Mousse into jars or serving glasses. Chill for an additional 30 minutes before serving.
