- 3 tbsp sugar (or maple syrup)
- 1 tsp pure vanilla extract
- 1 cup vegan whipping cream (chilled)
- Optional: 1/2 tsp vanilla bean paste or lemon zest
Instructions
- In a small bowl, mix the cornstarch with 3–4 tablespoons of plant milk until smooth. Set aside.
- In a saucepan, combine the remaining plant milk, sugar, and vanilla extract. Heat over medium heat until it begins to simmer.
- Stir in the cornstarch mixture and cook, stirring constantly, until the pudding thickens—about 1 minute.
- Remove from heat, transfer to a bowl, and cover with plastic wrap touching the surface. Let cool to room temperature, then refrigerate for 3 hours.
- Whip the vegan cream until stiff peaks form. Blend the chilled pudding until smooth and gently fold in the whipped cream.
- Spoon the Vanilla Pudding Mousse into jars or serving glasses. Chill for an additional 30 minutes before serving.
