  • 4 medium sweet potatoes
  • 1 lb ground beef or turkey
  • 1 cup black beans, drained and rinsed
  • 1 cup salsa
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Instructions

  1. Preheat oven to 400°F (200°C). Wash and scrub the sweet potatoes, then pierce them with a fork. Bake for 45-50 minutes until tender.
  2. While potatoes are baking, cook ground beef in a skillet over medium heat until browned. Drain excess fat.
  3. Add black beans, salsa, chili powder, cumin, garlic powder, onion powder, salt, and pepper to the beef. Simmer for 5 minutes.
  4. Once sweet potatoes are done, slice them open lengthwise and gently fluff the insides with a fork.
  5. Spoon the taco mixture into each sweet potato.
  6. Top with shredded cheese, diced avocado, and chopped cilantro.
