  • 1 tbsp olive oil or chili oil
  • ½ medium onion, diced
  • ½ red bell pepper, diced
  • 2 cloves garlic, minced
  • ½ tsp ground cumin
  • ½ tsp smoked paprika
  • ¼ tsp ground coriander
  • ¼ tsp chili powder (optional)
  • Salt and black pepper to taste
  • 1 cup canned crushed tomatoes
  • ⅓ cup crumbled feta cheese
  • 2 large eggs
  • 1 tbsp pesto (optional topping)
  • Fresh basil or parsley for garnish
  • Chili flakes for serving (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced onion and bell pepper. Cook for 5 minutes until soft.
  2. Add garlic, cumin, paprika, coriander, chili powder, salt, and pepper. Cook for 1 minute until fragrant.
  3. Stir in crushed tomatoes and let simmer for 15–20 minutes until thickened.
  4. Toast the bread slices until golden and crisp.
  5. In a non-stick skillet, heat chili oil. Scatter crumbled feta, let it sizzle for 1 minute.
  6. Crack eggs over the feta, season lightly. Cover and cook for 3–4 minutes until whites are set and edges are crispy.
  7. Spread shakshouka sauce over toast, top with crispy feta fried eggs.
  8. Garnish with pesto, fresh herbs, and chili flakes if desired. Serve warm.
