- 4 medium Yukon Gold potatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 pound ground turkey (or black beans for vegan)
- 1 tablespoon homemade taco seasoning
- 1/2 cup shredded cheddar cheese
- 1/2 cup guacamole
- 1/2 cup salsa
- 1/4 cup chopped cilantro
- 1 cup shredded lettuce
- 1 lime, cut into wedges
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss diced potatoes with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper.
- Spread potatoes on the sheet and roast for 25–30 minutes, flipping halfway through.
- While potatoes roast, cook ground turkey in a skillet with taco seasoning until browned.
- Remove potatoes from oven once crispy and golden.
- Assemble bowls: start with roasted potatoes, then layer turkey or beans, cheese, salsa, guacamole, shredded lettuce, and cilantro.
- Finish with a squeeze of lime and serve immediately.

- Swap ground turkey with black beans for a vegan version.
