  • 1 lb. flank steak (or NY strip/sirloin)
  • 1 pint grape or cherry tomatoes
  • ½ medium red onion, peeled and cut into chunks
  • 1 head romaine lettuce, chopped (~1012 cups)
  • 1 large cucumber, diced
  • ⅓ cup pitted kalamata olives, sliced
  • 1 cup garlic hummus
  • ½ cup crumbled feta cheese
  • 2 tsp. olive oil (or avocado oil)
  • Lemon wedges, for garnish
  • Fresh mint leaves, torn (optional)
  • For the Herbed Yogurt Dressing:
  • 1 cup plain yogurt
  • 1 tbsp olive oil
  • Juice of ½ lemon
  • 1 clove garlic, finely minced
  • ½ tsp dried oregano
  • ½ tsp dried dill
  • ½ tsp salt
  • 2 tsp fresh chopped mint (or ½ tsp dried mint)

Instructions

  1. In a small bowl, whisk together all dressing ingredients. Refrigerate until ready to use.
  2. Preheat grill to high heat (about 450℉). Pat steak dry and season with salt and pepper.
  3. Thread tomatoes and onion chunks onto skewers. Brush lightly with olive oil and sprinkle with salt and pepper.
  4. Grill steak for 4–5 minutes per side for medium-rare. Grill veggie skewers for about 5–8 minutes, turning occasionally, until lightly charred.
  5. Remove steak and veggies from the grill. Let the steak rest for 10 minutes before slicing thinly against the grain.
  6. Assemble the Mediterranean Steak Bowls: Start with chopped romaine, add steak slices, grilled veggies, cucumber, olives, hummus, and feta cheese.
  7. Drizzle generously with herbed yogurt dressing and garnish with lemon wedges and fresh mint if desired.
  8. Serve immediately or store components separately for easy meal prep.
