- 3 large eggs, separated
- 1/2 cup cottage cheese, blended until smooth
- 1/4 tsp cream of tartar
- 1/2 tsp salt
- 1 tbsp cornstarch or arrowroot powder (optional)
Instructions
- Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a clean bowl, beat the egg whites with cream of tartar until stiff peaks form.
- In another bowl, mix egg yolks, blended cottage cheese, salt, and optional cornstarch until smooth.
- Gently fold one-third of the egg whites into the yolk mixture to lighten it, then fold in the rest without deflating the mixture.
- Spoon six even mounds of the batter onto the baking sheet.
- Bake for 25–30 minutes, until golden brown and firm to the touch.
- Allow to cool on the tray before serving.
Notes
- Use room temperature ingredients for better texture.
- Do not overmix the batter to preserve fluffiness.
- Store in an airtight container for up to 3 days or freeze with parchment paper between layers.
