Description

Fluffy Cottage Cheese Cloud Bread is a light, gluten-free, low-carb bread alternative made with whipped egg whites and creamy cottage cheese. It’s soft, airy, and perfect for those on keto, gluten-free, or high-protein diets. Easy to make and endlessly customizable, this cloud bread is ideal for snacks, sandwiches, or breakfast.


Ingredients

  • 3 large eggs, separated
  • 1/2 cup cottage cheese, blended until smooth
  • 1/4 tsp cream of tartar
  • 1/2 tsp salt
  • 1 tbsp cornstarch or arrowroot powder (optional)

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a clean bowl, beat the egg whites with cream of tartar until stiff peaks form.
  3. In another bowl, mix egg yolks, blended cottage cheese, salt, and optional cornstarch until smooth.
  4. Gently fold one-third of the egg whites into the yolk mixture to lighten it, then fold in the rest without deflating the mixture.
  5. Spoon six even mounds of the batter onto the baking sheet.
  6. Bake for 25–30 minutes, until golden brown and firm to the touch.
  7. Allow to cool on the tray before serving.

  • Do not overmix the batter to preserve fluffiness.
  • Store in an airtight container for up to 3 days or freeze with parchment paper between layers.
