  • 1.5 cups very ripe bananas (3 fresh bananas or 4 thawed, previously frozen bananas)
  • 2 tsp lemon juice
  • 3 cups all-purpose flour
  • 1.5 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup softened butter
  • 2 cups white sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 1.5 cups buttermilk (or milk soured with 1 tbsp vinegar/lemon juice)
  • 1/2 cup softened butter (for frosting)
  • 8 oz cream cheese, room temperature (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • 3.5 cups icing sugar (powdered sugar, for frosting)

Instructions

  1. Preheat oven to 275°F (135°C) and grease a 9×13-inch cake pan.
  2. Mash the bananas and mix with lemon juice, set aside.
  3. In a medium bowl, combine flour, baking soda, and salt.
  4. Prepare buttermilk if needed by adding vinegar or lemon juice to milk and letting it sit for 5 minutes.
  5. In a large bowl, cream together softened butter and sugar until light and fluffy.
  6. Beat in eggs one at a time, then stir in vanilla extract.
  7. Alternate adding the flour mixture and buttermilk into the batter, starting and ending with the flour.
  8. Fold in the mashed bananas gently.
  9. Pour batter into the prepared pan and bake for about 1 hour and 10 minutes, or until a toothpick comes out clean.
  10. Immediately after baking, place the hot cake into the freezer (on a folded towel) for 45 minutes to lock in moisture.
  11. Meanwhile, prepare the frosting by creaming together butter and cream cheese.
  12. Beat in vanilla extract and slowly add icing sugar until the frosting is smooth and fluffy.
  13. Once the cake has cooled completely, frost generously and serve!

Notes

  • You can replace half of the all-purpose flour with whole wheat flour for a healthier version.
  • Adding cinnamon or nutmeg to the batter can bring extra warmth and flavor.
  • Turn this recipe into cupcakes by reducing the baking time to around 30 minutes.
