- 1.5 cups very ripe bananas (3 fresh bananas or 4 thawed, previously frozen bananas)
- 2 tsp lemon juice
- 3 cups all-purpose flour
- 1.5 tsp baking soda
- 1/4 tsp salt
- 3/4 cup softened butter
- 2 cups white sugar
- 3 eggs
- 2 tsp vanilla extract
- 1.5 cups buttermilk (or milk soured with 1 tbsp vinegar/lemon juice)
- 1/2 cup softened butter (for frosting)
- 8 oz cream cheese, room temperature (for frosting)
- 1 tsp vanilla extract (for frosting)
- 3.5 cups icing sugar (powdered sugar, for frosting)
Instructions
- Preheat oven to 275°F (135°C) and grease a 9×13-inch cake pan.
- Mash the bananas and mix with lemon juice, set aside.
- In a medium bowl, combine flour, baking soda, and salt.
- Prepare buttermilk if needed by adding vinegar or lemon juice to milk and letting it sit for 5 minutes.
- In a large bowl, cream together softened butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- Alternate adding the flour mixture and buttermilk into the batter, starting and ending with the flour.
- Fold in the mashed bananas gently.
- Pour batter into the prepared pan and bake for about 1 hour and 10 minutes, or until a toothpick comes out clean.
- Immediately after baking, place the hot cake into the freezer (on a folded towel) for 45 minutes to lock in moisture.
- Meanwhile, prepare the frosting by creaming together butter and cream cheese.
- Beat in vanilla extract and slowly add icing sugar until the frosting is smooth and fluffy.
- Once the cake has cooled completely, frost generously and serve!
Notes
- You can replace half of the all-purpose flour with whole wheat flour for a healthier version.
- Adding cinnamon or nutmeg to the batter can bring extra warmth and flavor.
- Turn this recipe into cupcakes by reducing the baking time to around 30 minutes.
- Always use overripe bananas for the best sweetness and moisture.
