- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts, diced
- 2 teaspoons Cajun seasoning (or Italian seasoning)
- 3 cloves garlic, minced
- 2 cups penne pasta (or fusilli)
- 1½ cups chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 cup baby spinach (optional)
- Salt and black pepper to taste
- Chopped parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Season diced chicken with Cajun or Italian seasoning.
- Add chicken to the pan and cook until golden brown and cooked through, about 6–7 minutes. Remove and set aside.
- In the same pan, add garlic and sauté for 1 minute until fragrant.
- Pour in the chicken broth and heavy cream, then bring to a gentle boil.
- Add pasta, stir, and reduce heat. Cover and simmer for 10–12 minutes or until pasta is tender and liquid is mostly absorbed.
- Stir in Parmesan cheese and the cooked chicken. Add spinach if using and stir until wilted.
- Season with salt and pepper as needed. Garnish with parsley and serve warm.

- For a lighter option, use half-and-half or Greek yogurt instead of heavy cream.
- Substitute spinach with kale or skip it entirely if preferred.
