Ingredients

  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, diced
  • 2 teaspoons Cajun seasoning (or Italian seasoning)
  • 3 cloves garlic, minced
  • 2 cups penne pasta (or fusilli)
  • 1½ cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 cup baby spinach (optional)
  • Salt and black pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season diced chicken with Cajun or Italian seasoning.
  2. Add chicken to the pan and cook until golden brown and cooked through, about 6–7 minutes. Remove and set aside.
  3. In the same pan, add garlic and sauté for 1 minute until fragrant.
  4. Pour in the chicken broth and heavy cream, then bring to a gentle boil.
  5. Add pasta, stir, and reduce heat. Cover and simmer for 10–12 minutes or until pasta is tender and liquid is mostly absorbed.
  6. Stir in Parmesan cheese and the cooked chicken. Add spinach if using and stir until wilted.
  7. Season with salt and pepper as needed. Garnish with parsley and serve warm.

  • For a lighter option, use half-and-half or Greek yogurt instead of heavy cream.
  • Substitute spinach with kale or skip it entirely if preferred.
