  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup seasoned breadcrumbs
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter (for toasting croissants)
  • 1/2 cup lettuce leaves
  • 1 large tomato, sliced
  • 4 slices Swiss or cheddar cheese
  • 1/4 cup mayonnaise (or honey mustard)
  • Vegetable oil for frying

Instructions

  1. Pound chicken breasts to an even thickness and season with salt, pepper, and paprika.
  2. Coat chicken in flour, dip in beaten eggs, and dredge in seasoned breadcrumbs, pressing firmly.
  3. Heat oil in a skillet over medium heat and fry chicken for 3–4 minutes per side until golden brown and cooked through.
  4. Slice croissants horizontally but not all the way through and lightly butter the insides.
  5. Toast croissants in a pan or oven until lightly crispy.
  6. Spread mayonnaise or honey mustard inside each croissant.
  7. Place a crispy chicken fillet inside each croissant, add lettuce, tomato slices, and cheese.
  8. Close the croissant and serve immediately for the best flavor and texture.
