  • 6 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked sausage crumbles (or vegetarian substitute)
  • 1/4 cup salsa (plus extra for serving)
  • 1/2 cup diced cooked potatoes (optional)
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup fresh spinach leaves (optional)
  • 2 tablespoons milk
  • 1 tablespoon butter or oil for cooking
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together eggs, milk, salt, and pepper.
  2. Heat butter in a skillet over medium heat. Add the eggs and scramble until just set. Remove from heat.
  3. In the same pan, sauté diced bell peppers and onions until softened.
  4. Warm the flour tortillas slightly to make them flexible.
  5. Lay each tortilla flat. Layer scrambled eggs, sausage, veggies, cheese, and salsa in the center.
  6. Fold the sides in, then roll up the burrito tightly from the bottom.
  7. Place the burrito seam-side down on a hot skillet. Toast for 2–3 minutes per side until golden.
