Description

  • 1 lb boneless, skinless chicken breasts, cut into cubes
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked white or brown rice
  • 1 cup shredded purple cabbage
  • 1/2 cup julienned carrots
  • 1/2 cup sliced cucumber
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds (optional)
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon rice vinegar

Instructions

  1. Mix olive oil, garlic powder, salt, and pepper in a bowl. Add chicken cubes and coat evenly.
  2. Heat a skillet over medium heat. Cook chicken for 6–8 minutes until golden brown and fully cooked.
  3. In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth to make the Bang Bang sauce.
  4. In serving bowls, add rice as the base and top with cabbage, carrots, cucumber, and green onions.
  5. Place the cooked chicken on top of the veggies.
  6. Drizzle Bang Bang sauce over the chicken and garnish with sesame seeds.
  7. Serve immediately or refrigerate for meal prep.

  • Use cauliflower rice for a low-carb version.
